A couple wanting a quick reset and a family planning their main holiday of the year are, in practice, choosing between two different kinds of trip, even if both end up in the same caravan. Understanding which one you actually are makes the choice easier.
For a family with children, particularly school-age ones, a week tends to work harder for the effort involved. Packing for several people, planning meals, keeping children entertained: all of that overhead is roughly the same whether the stay is three nights or seven, so a longer stay spreads that effort across more days and generally works out better value per night too. A week also allows for the inevitable one wet day without losing the whole trip, and gives time to properly see more than a single nearby town.
Both half-terms fill up faster than an ordinary week because every school in the country breaks up at roughly the same time, so the whole country's families are looking at the same seven days. Booking two to three months ahead gives the best choice of pitch and accommodation type; leaving it to the fortnight before means taking whatever's left, if anything is.
